Ingredients
This recipe is designed to build two hearty stacks. Scale up easily by doubling or tripling the ingredients.
For the Meat Stacks:

1 lb (450g) ground beef (80/20 or 75/25 is best for flavor and moisture)

1 tsp salt

1/2 tsp black pepper (omit for strict carnivore)

1/2 tsp garlic powder (omit for strict carnivore)

1 tbsp butter, tallow, or lard, for frying
For the Topping & Eggs:

4 oz (about 4-6 slices) of your favorite melting cheese. Great options include:

Provolone

Mozzarella

Cheddar

Gouda

2 large eggs

Pinch of salt for the eggs

1 more tbsp butter, tallow, or lard, for frying eggs
Optional Garnish (for non-strict carnivore):

Instructions
This recipe comes together quickly, so it’s a good idea to have all your ingredients prepped and ready to go before you start the stove.
Step 1: Prepare the Beef
Place the ground beef in a mixing bowl. Sprinkle the salt, pepper (if using), and garlic powder (if using) evenly over the meat. Use your hands to gently mix the seasoning into the beef. Be careful not to overwork the meat, or your stacks will be tough. Divide the meat into 4 equal portions and gently form them into patties about 1/2-inch thick. They should be roughly the same size and shape. Using your thumb, make a small dimple in the center of each patty. This prevents them from puffing up into a ball shape as they cook.
Step 2: Cook the Meat Stacks
Place a large cast-iron or heavy-bottomed skillet over medium-high heat. Add 1 tablespoon of your chosen cooking fat (butter, tallow, or lard). Once the fat is hot and shimmering, carefully place the four patties into the skillet, leaving a little space between them. You should hear a satisfying sizzle.

Cook for 3-4 minutes on the first side, without moving them, until a deep, golden-brown crust forms.

Flip the patties. Cook for another 2-3 minutes for medium, or until they reach your desired level of doneness. If you like your meat well-done, cook for 4-5 minutes on the second side. Because we will be topping them with cheese and serving them with an egg, a medium doneness is perfect.
Step 3: Build the Stacks
Once the patties are cooked through, it’s time to build the stacks. Do not turn off the heat yet! Keep the heat on low.

Take two of the patties and place a slice or two of cheese on top of each one.

Now, carefully place the other two patties directly on top of the cheesy ones, creating two double-decker patty stacks.

Place another slice or two of cheese on top of each stack.

Cover the skillet with a lid for about 1-2 minutes. This will trap the heat and melt the cheese between the patties and on top into a glorious, gooey layer.

Once the cheese is perfectly melted, use a spatula to carefully transfer each Cheesy Meat Stack to a serving plate.
Step 4: Fry the Eggs
Wipe the skillet clean with a paper towel (be careful, it’s hot!). Return it to the stove over medium-low heat and add the remaining tablespoon of butter. Let it melt and sizzle gently. Carefully crack the two eggs into the skillet, making sure to keep the yolks intact. Sprinkle a tiny pinch of salt over the eggs.

For sunny-side-up eggs with runny yolks, cook for about 2-3 minutes, until the whites are set but the yolk is still liquid. You can spoon a little of the hot butter over the top of the eggs to help the whites cook through.

For over-easy eggs, cook for 2 minutes, then carefully flip and cook for just 30 seconds more.
Step 5: Assemble and Serve
Place one perfectly fried egg on top of each Cheesy Meat Stack. If you’re using fresh chives or parsley, sprinkle them over the egg for a pop of color and freshness. Serve immediately while the stacks are hot and the cheese is perfectly melted and stretchy.

Don’t Overwork the Meat: When forming the patties, handle the ground beef as little as possible. Overworking it compresses the meat and results in a tough, dense stack instead of a tender, juicy one.

Cheese Choices: Feel free to experiment! A combination of cheeses works beautifully. Try a slice of provolone between the patties for its excellent melting properties and a slice of sharp cheddar on top for a more intense flavor.

Make it a Meal: For a truly decadent, all-animal product meal, serve these stacks with a side of crispy bacon or pork rinds for dipping into the runny egg yolk.
